1 1/2 cups black bean, Verde Valle, cooked.

2 chiles guajillo, Verde Valle

1 cup broth where the bean was cooked.

16 thin tortillas

2 cups pork rinds, chopped

1/4 onion

PREPARATION

CLEAN the chilies, roast them and soak them in boiling water until they get soft; blend with a little bit of water and the quarter of an onion, strain and pour into a pot with a tablespoon of oil. COOK over low heat. GRIND the beans with the soup and pour into the pot where you have chili, continue to cook everything together for a few minutes. If it is too thick, mix and add more soup. HEAT in a pan enough oil to fry the tortillas, fry them quickly and drain . PLACE on plates and fill with pork rinds. COVER with bean sauce and serve with grated cheese, cream and onion.
